Description

A simple and delicious Easy Oven Roasted Potatoes recipe featuring crispy golden russet potatoes seasoned with garlic and onion powder. Perfect as a side dish for any meal, these roasted potatoes are tossed in olive oil and baked to perfection, then garnished with fresh parsley.

Ingredients

Scale

Potatoes

  • 2 lbs russet potatoes

Seasonings

  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Preheat oven. Preheat your oven to 425°F and line a baking sheet with parchment paper or spray it with cooking spray to prevent the potatoes from sticking.
  2. Prepare potatoes. Scrub the russet potatoes clean and chop them into ½ inch chunks, ensuring pieces are roughly the same size for even cooking.
  3. Season potatoes. Place the potato chunks into a large bowl and toss them with olive or avocado oil, garlic powder, onion powder, salt, and ground pepper until they are fully coated in the seasoning mixture.
  4. Bake potatoes. Spread the seasoned potatoes evenly on the prepared baking sheet. Bake in the preheated oven for 40 minutes, flipping them halfway through the cooking time to ensure even browning. The potatoes are done when they are golden brown and can be easily pierced with a fork.
  5. Finish and serve. Taste the roasted potatoes and adjust seasoning if needed. Garnish with freshly chopped parsley or other fresh herbs, then serve immediately for the best flavor and texture.

Notes

  • For extra crispiness, soak the potato chunks in cold water for 30 minutes before seasoning to remove excess starch, then dry thoroughly.
  • You can substitute russet potatoes with Yukon Gold for a creamier texture.
  • Feel free to experiment with additional herbs like rosemary or thyme for more aromatic flavor.
  • Use avocado oil as a higher smoke point alternative to olive oil if desired.
  • Make sure to flip the potatoes halfway during baking to promote even browning and prevent sticking.
