Description

  • 1 to 2 tablespoons lemon juice


Instructions

  1. Cook the vegetables: Heat the olive oil in a large pot over medium-high heat. Add the diced onion, carrot, and celery to the pot, cooking and stirring for 4 to 5 minutes until they begin to soften.
  2. Add the aromatics: Stir in the minced garlic, dried oregano, dried basil, and salt. Cook for an additional 1 minute to release the flavors.
  3. Add the cabbage: Add the chopped cabbage to the pot and cook for 5 minutes, stirring frequently to allow it to sweat and soften.
  4. Let it simmer: Pour in the vegetable broth and diced tomatoes. Bring the soup to a simmer and cook uncovered for 10 minutes, or until all the vegetables reach your preferred tenderness.
  5. Finish and serve: Remove the soup from heat. Stir in the lemon juice, fresh parsley, and cracked black pepper to taste. Mix well and serve hot.

Notes

  • Let the soup cool completely before storing in an airtight container; it will keep for 4 to 5 days in the refrigerator.
