Description

This Chocolate Cobbler is a rich and fudgy dessert featuring a chocolate batter topped with a cocoa and sugar topping that bakes into a cake with a pudding-like bottom. Easy to make and perfect served warm with ice cream.

Ingredients

Scale

Batter:

  • 1 cup flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup sugar
  • 1 1/2 tablespoons cocoa powder
  • 2 tablespoons butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts (optional)

Topping:

  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 cup boiling water

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the cobbler.
  2. Mix Batter: In a medium-sized bowl, combine flour, baking powder, salt, sugar, and cocoa powder. Stir in melted butter, milk, and vanilla extract until smooth. Fold in chopped walnuts if using.
  3. Pour Batter: Spread the batter evenly into a greased 1.5 quart casserole dish or similar baking pan.
  4. Prepare Topping: In a separate bowl, mix together sugar, brown sugar, salt, and cocoa powder for the topping.
  5. Add Topping: Sprinkle the dry topping mixture evenly over the batter in the casserole dish; do not stir.
  6. Add Water: Carefully pour 1 cup of boiling water over the top of the mixture without stirring.
  7. Bake: Place the dish in the oven and bake for 30 minutes or until the top is almost set. The cake will rise to the top while a pudding forms at the bottom.
  8. Serve: Serve the cobbler warm, ideally with a scoop of ice cream for a delicious contrast.

Notes

  • Make a Double Batch!: This recipe doubles well and can be baked in a 9×13-inch casserole dish for more servings.
  • Keep it Fudgy!: Avoid overbaking to maintain the fudgy pudding layer on the bottom; bake just until the top is done.
  • Cocoa Powder Update: The recipe was updated in 2024 to increase the topping cocoa powder from 1 tablespoon to 2 tablespoons for a deeper chocolate flavor.
  • Walnut Variation: Chopped walnuts are optional and can be omitted or substituted with other nuts as preferred.
  • Serving Suggestion: Serve warm with vanilla ice cream or whipped cream for enhanced flavor and texture.
