Almond Filling

Instructions
- Preheat Oven: Preheat the oven to 400℉ and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Thaw Puff Pastry: Remove the sheet of puff pastry from the freezer and let it thaw slightly on the counter until pliable but still cool.
- Make Almond Filling: In a mixing bowl, combine the softened butter, sugar, almond flour, egg yolk, and almond extract until smooth and well blended.
- Prepare Filling Bag: Spoon the almond filling mixture into a resealable plastic bag, seal it tightly, and set aside until ready to pipe.
- Cut Pastry Squares: Lay the puff pastry sheet flat on a clean surface and cut it into 9 even squares. Transfer these squares to the prepared baking sheet.
- Score Pastry Borders: Using a sharp small knife, lightly score a smaller square inside each puff pastry square about 1 centimeter from the edges, being careful not to cut all the way through, creating a raised border.
- Fill Pastries: Cut one corner off the filling bag and pipe the almond filling evenly into the inner scored sections of each pastry square.
- Glaze Pastry Borders: Whisk together the egg white and water, then brush this egg wash onto the outer borders of the puff pastry squares to help them brown and seal.
- Add Almonds: Sprinkle sliced almonds generously over the filled almond mixture on each pastry square.
- Bake Pastries: Bake in the preheated oven for 15 minutes or until the pastries are puffed up and golden brown all over.
